Portland, Oregon-based Briggs whips-up an impressive range of salty and sweet pairings, tucking everything from smoked paprika and roasted almonds into dark chocolate bars to watermelon caramel layered into miniature artisan sweets. His “Pig” line reveals a collection of pork plus chocolate treats, including ganache truffles fused with pig’s blood. The handmade, small batch chocolates definitely push the boundaries for chocolate pairings but that’s part of what makes them such a unique experience.
