Moonshine ice cream. Mojito popsicles. Pinot truffles. We’re always up for booze-infused collaborations. And the latest to catch our eye is a top-notch mash-up of craft beer and pickles: the Hop-Pickle. Brooklyn Brine, an independent artisan company that’s passionate about ‘damn fine pickles’, teamed up with Dogfish Head Brewery to create this all-natural, purportedly earthy, hopped-up pickle.

Putting the fun back in funky, Dogfish Head is a craft brewery that challenges beer conventions with its year round favorites, limited releases, and seasonal brews of the unexpected variety. Together, they’ve developed the Hop-Pickle made by fusing Dogfish Head 60 Minute Indian Pale Ale with caramelized onions and Cascade hops. The resulting pickled cuke is then packaged by hand in Brooklyn Brine’s artisanal kitchen. While we haven’t yet sampled the Hop-Pickle, which just hit a handful of shelves, we reckon it’d go brilliantly alongside a chilled Dogfish Head brew at your next barbeque.
