While Bourke Street Bakery’s chilled-out community vibe may give the appearance of non-chalantness, rest assured the owners — bread maker Paul Allen and pastry chef extraordinaire David McGuinness — are committed to sourcing quality, mostly organic, ingredients that they and their team diligently work into the beautiful treats that have earned them so many fans.
