Obika Mozzarella Bars
Fresh buffalo mozzarella matched with salty prosciutto and chilled Prosecco is my idea of the perfect Italian lunch. The smooth and silky surface of the curvaceous mozzarella, with its creamy center that slightly oozes when pierced, is epicurean bliss. And I am not nearly alone in my enthusiasm: mozzarella has now joined the ranks of haute chocolate and wine, with its own class of internationally placed bars. Obika is just that, a set of stylish mozzarella bars with locations in places like Rome, New York, Tokyo, and Kuwait City.
The concept behind the bar centers on offering fresh, authentic Mozzarella di Bufala Campana, served alongside high-quality artisanal Italian products. Here, purveyors regularly fly in (where applicable) handmade mozzarella processed entirely from water buffalo milk. To really explore the depths of the cheese, go for a tasting. Depending on the mozzarella’s region, different flavors and intensities, ranging from sweet and delicate to strong and smoky, are exhibited. What’s more, each tasting is paired with Italian specialities like prosciutto from San Daniele, Sicilian vegetables, and salami from free range Tuscan pigs. This is a “Slow Food” junkie’s paradise. Admittedly, some of the Obika bars have received a few less-than-stellar reviews, but that is just one more reason to go and check it out yourself.

The Dutch Baby: oven-baked pancake from Ottawa’s Edgar’s
An oven-baked pancake with soufflé tendencies drizzled with lemon juice and dusted with sugar. Ah, the dutch baby. Thanks to an inspired brunch from Ottawa’s tiny but potent Edgar’s, this old school favorite is making a modern-day coming back. Here, chef/owner Marysol reinvents this classic, turning it into a masterpiece of the sweet and salty persuasion. First, the dutch baby is baked in a skillet greased with duck fat, then filled with tender, salty pork belly, nestled beside chunky apple compote and dotted with knobs of aged cheddar. It’s topped off with a splatter of maple syrup (this is Canada, after all) making it the best new brunch in town. Here’s hoping this is a trend that takes off.

SnoBAr: a shaved ice shop in West Hollywood
Though I’ve yet to visit SnoBar – a natural “shaved ice” spot that’s opened shop in West Hollywood, – one look at that paper-thin texture makes me want to hop on a flight direct to California. Based on a traditional Taiwanese dessert, SnoBar’s shaved ice claims to have the creaminess of ice cream in a ‘feathery, cotton candy-like texture’. (Yes please!) In flavors like green tea, taro, honeydew, and rose, it’s gaining rave reviews from Los Angelinos, hailing it the next big trend. To quote one local blogger, ‘If ice cream could whisper, this is what it would say’. I think a little on-hands research is definitely in order.

The Danish electro-pop trio Tiger Baby has been around for a few years, mostly known in their home country. I’ve listened to their new single, Crystal Ball, a lot. And I love it. Melancholic disco pretty similar to what I’m doing myself, though the sound is a bit rougher, reminiscent of French blog disco, á la Jupiter.

UK music journalist Everett True comes from the Nick Kent school of writing: live the life and hope to come out the other end with one hell of a story. And he has. Not all dark, epic music has to be harsh. British songstress Rose Kemp builds operatic folk tunes that crescendo from acoustic, string-infused atmospherics into menacing, down-tuned heaviness, drawing as much from Neurosis as she does from PJ Harvey, Kate Bush, and even Massive Attack. Read more
